Spicy Kale Sausage Spaghetti
Whole wheat baked spaghetti pie with kale, (turkey or pork) sausage and tomatoes.
Ingredients
- 8 ounces whole wheat spaghetti
- 2 eggs lightly beaten
- 1 lb Jimmy Dean Pork Sausage Roll, Regular (turkey sausage works well too, really any type)
- 3 tb garlic infused olive oil to cook kale with (if you don’t have, use regular olive oil and add 3 garlic cloves)
- 3 cups fresh kale stems removed and roughly chopped/torn
- 1 can of whole tomatoes – I used 5 frozen beefsteaks I had which I thawed in the pasta water before adding
- 2 tb Trader Joe’s Soffrito
- 2 cups of favorite shredded cheese (I used cheddar)
Instructions
- Preheat oven to 450 degrees F. Grease a 2 qt casserole round dish with non-stick cooking spray.
- Bring a large pot filled with water to a boil. Cook for ~8 minutes. Place eggs in a large bowl and lightly whisk. Add drained pasta and toss to coat.
- While the pasta cooks, heat up the pan add sausage, cook 2-3 minutes, until browned, stirring to crumble. Add garlic olive oil and kale, cook until greens wilt, ~2-3 minutes. Add tomatoes & their juices and soffrito seasoning. Stir to combine.
- Pour sausage/sauce mixture into spaghetti. Stir in half the cheese. Toss to combine and pour in prepared cake pan. Sprinkle with remaining cheese.
- Bake for 20 minutes. Cut into 6 triangles.
